Crockpot Sunday Roast with Apple/Cranberry sauce

My first sunday crockpot meal. You are not officially a Mormon wife until you successfully can make a crockpot roast. And ladies and gentleman I think I passed! Its official! I'm a wife!

ROAST

Ingredients

1 Pot roast, about 4 lbs (mine was 2.68 lbs)
2 onions, sliced (i used 1 red onion)
3/4 tsp black pepper
3/4 tsp dried rosemary (i used fresh from my little pot)
1/4 tsp cayenne pepper (were not a spicy family so i used about 1/8 tsp)
3/4 cup red wine (1/2 cup cooking red wine)
1/2 cup chicken broth
1/2 cup apple raspberry juice concentrate (Ralphs didn't have cranberry/apple concetrate)
1/2 can jellied cranberry sauce
2 apples, diced
1/4 cup reduced sodium soy sauce
2 garlic cloves, diced
1/4 cup flour

Mix together pepper, rosemary and cayenne pepper. Brush roast with spices and put roast on onions in plastic bag.

In another bowl, mix red cooking wine, chicken broth, cranberry cocktail concentrate, soy sauce and garlic cloves. Pour mixture on roast in plastic bag and let soak overnight in the refridgerator.

On sunday, put onions on bottom of roast and pour sauce over. Top with apples and cranberry sauce.  Cook on low for 6 hours. Enjoy!!


SWEET POTATOES

Ingredients

3 sweet potatoes diced into cubes
2 tsp butter
sprinkle of brown sugar
dried rosemary
sea salt
tin foil


Preheat oven 400. Rub diced sweet potatoes with butter and brown sugar. Sprinkle with rosemary and salt. Make tent with tin foil (double a sheet and place on bottom so it is thicker on bottom), place sweet potatoes on top and close top of tent, completely encasing potatoes. Place in oven and cook for about 1 hour. Oh sooooo good!!!


ROLLS

Ingredients

2 cups scalded milk (I use skim and microwave for 4 min..."it really shouldn't boil" says mom)
2 Tbls yeast
1/4 cup brown sugar
1 long quirt of agave nectar (honey)
2 tsp salt
1/3 cup butter
2 egg whites
5 cups mixture of flours (I use: bran flour, wheat germ, whole wheat, rye flour and a little cracked wheat)


Preheat oven to 375. Microwave milk and add butter. Let milk/butter mixture cool.  In the mixer, combine sugar, agave nectar, salt and yeast. Mix in the WARM milk/butter mixture. (It can't be too hot as the yeast won't develop properly). Then add the egg whites. Mix mix mix until the gluten develops about 4 min. (It becomes shiny). Now add the flours! Once all the flours are added, knead with mixture about 12 min. Let rise for about 1 hour. Punch down and roll out your rolls. Let rolls rise about 30 min and then bake at 375 for 10 min...or longer if your oven is newer than mine:)

For delicious addition: add sugar and cinnamon and THEN roll up rolls. Yum!!!


Hopefully i made more than 3 dishes that sunday. Oh well. These were the only ones worth remembering apparently.
